Bright + Cherry Compote
At ALKAME CO we like to make herbs fun, tasty and easy to incorporate into your daily routines. This sour cherry and chia compote featuring our MOOD NECTAR formula does just that.
Sure, it’s easy to use MOOD NECTAR by just scooping it into a glass of water—and we love and have it that way often—but making a batch of this compote and having it with your daily breakfast or afternoon snack adds another layer of joy and yum. And partaking in an offering like this that is delicious and pleasurable just enhances the magic and good feels of our mood support formula.
This recipe departs from a traditional compote by way of containing chia seeds. We chose to incorporate chia seeds in order to lessen the cooking time (which I always finds retains a brighter flavor in the fruit) and to add another layer of nutritional value.
Our favorite way to enjoy this compote is layered in between yogurt and granola. It’s also great in yogurt on its own, added to smoothies, spread on toast or even added to a cheese board (I love serving yummy herbal treats/foods/drinks at parties as an alcohol-free social lubricant).
Ingredients
4 C Sour Cherries (fresh* or frozen)
1/4 C Maple Syrup
2 Tbsp + 2 Tsp MOOD NECTAR
2 Tbsp Chia Seeds
Directions
1. Add cherries and maple syrup to medium sauce pan on medium high heat. Bring to a boil and reduce heat to medium. Simmer for 10 minutes, stirring often and use the back of a spoon to smash the cherries when there are a couple minutes of cook time left.
2. Remove from heat and transfer into a bowl, then add the MOOD NECTAR and stir until fully incorporated. Transfer bowl into fridge to cool.
3. Once mixture has cooled down and is no longer hot to the touch (can be a little warm), add the chia seeds and mix well.
4. Return mixture to the fridge for at least two hours to let the chia seeds thicken the compote. Then store in jar or other sealed container in the fridge for up to 10 days.
Makes 8 servings.
*If using fresh cherries, be sure to pit them first. If you don’t have a pitter at home, use the flat side of a large kitchen knife to press down on several cherries at once. This will loosen the pit and split the cherries, making the pits quick and easy to separate out.
